Waldorf Salad

Time: 30 Minutes ・ Difficulty: Easy ・ Serves: 8 People

Ingredients

  • 1 cinnamon apple tea bag

  • 1/2 cup warm water

  • 1/4 cup currants

  • 1/2 cup julienne green apple

  • 2/3 cup julienne red apple

  • 1/2 cup julienne peeled carrots

Dressing

  • 1/4 cup nonfat plain yogurt

  • Dash pure vanilla extract

  • 1/2 teaspoon honey

  • 1 tsp fresh lemon juice

  • 1 tsp canola oil mayonnaise

Instructions

  1. In a medium bowl, combine all ingredients for dressing. Set aside.

  2. In a small bowl steep tea bag in warm water for 30 seconds. Remove tea bag and add currants. Let sit for 10 minutes, or until plump. Drain water and add to dressing along with apples and carrots. Mix well.
