8 slices Cranberry Pecan Bread 1/4 tsp pure vanilla extract 1/2 cup 2% milk 2 lg eggs 8 oz sliced, roasted turkey breast 4 slices Swiss cheese 1/2 cup peach preserves Dash powdered sugar, optional
Heat a large sauté pan over medium and lightly spray with canola oil.
In a shallow bowl, combine vanilla, milk, and eggs and beat until well mixed. Dip 2 slices of bread into egg mixture and cook until golden brown on one side, about 1 to 2 minutes. Place 2 ounces turkey and 1 slice of Swiss cheese on 1 slice of cooked French toast. Top with 2nd slice of French toast and cook sandwich until both outer sides are golden brown. Repeat for remaining sandwiches.
Serve with 2 tablespoons of peach preserves on the side. Garnish with powdered sugar, if desired.
