Traditional Thai Porridge

Ingredients

  • 1 cup brown rice

  • 2 1/4 cups lite coconut milk

  • 1/2 cup raisins

  • Pinch salt

  • 1 cup sweet red beans

Instructions

  1. In a large saucepan, combine rice, coconut milk, raisins and salt and bring to a boil. Reduce heat to medium-low and simmer for 50 to 60 minutes. Turn heat off and let sit for 15 minutes.

  2. Warm beans for 30 seconds in microwave. Add to porridge and mix gently.
