Spinach Salad with Strawberry Champagne Vinaigrette

Ingredients

  • 1 cup sliced apples

  • 1/2 cup Apple Cider Vinaigrette

Strawberry Champagne Vinaigrette

  • 1/2 cup strawberries

  • 2 Tbsp champagne vinegar

  • 1 Tbsp cane sugar

  • Pinch sea salt

  • 4 cups organic spinach leaves

  • 4 tsp chopped toasted walnuts

  • 4 Tbsp crumbled chèvre cheese

  • 4 Tbsp dried cranberries

Instructions

  1. Place apple slices in a glass baking pan and cover with apple cider vinaigrette. Marinate in refrigerator for at least 2 hours.

  2. In a blender container, combine all ingredients for strawberry champagne vinaigrette and puree.

  3. In a medium bowl, toss together spinach and strawberry vinaigrette.

  4. Serve 1 cup of spinach with 1/4 cup of marinated apples, 1 teaspoon walnuts, 1 tablespoon cheese and 1 tablespoon cranberries.
