Southwest Pasta Salad

Time: 45 Minutes ・ Difficulty: Easy ・ Serves: 8 People

Ingredients

  • 2 cups cooked fusilli pasta

  • 1/2 cup diced fresh tomatoes

  • 1 tsp minced jalapeño pepper

  • 1/2 cup chopped broccoli florets

  • 1/2 cup diced red onion

Dressing

  • 2 Tbsp Dijon mustard

  • 1 Tbsp canola oil mayonnaise

  • Pinch cayenne pepper

  • 1/2 tsp ground cumin seed

  • 1/2 tsp paprika

  • 1/4 tsp marjoram

  • 1/2 tsp sea salt

  • 1/4 tsp freshly ground black pepper

Instructions

  1. Combine all dressing ingredients in a small bowl and mix well.

  2. In a large bowl combine pasta, tomatoes, jalapeño peppers, broccoli and onion. Add dressing and toss to evenly coat pasta mixture.
