Onion Relish

Ingredients

  • 1 lg onion, thinly sliced

  • 1 tsp extra virgin olive oil

  • 3/4 cup red wine

  • 6 Tbsp red wine vinegar

  • 1/4 tsp sea salt

  • Pinch freshly ground black pepper

  • 3/4 cup water

  • 1 1/2 Tbsp cane sugar

Instructions

  1. In a large saucepan, cook onions over medium heat in oil until brown. Add red wine and simmer until wine has reduced by half.

  2. Add vinegar, sugar, salt, pepper and water. Cook until liquid has evaporated.
