Miso Soup

Time: 45 Minutes ・ Difficulty: Easy ・ Serves: 4 People

Ingredients

1/3 cup scallions, finely minced 1/2 tsp sesame oil 3 Tbsp brown miso paste 1 qt vegetable stock 1/4 cup firm tofu, diced (optional)

Instructions

  1. In a medium sauce pan over medium heat, sauté shallots in sesame oil until translucent in appearance.

  2. Add miso paste and stir well. Add vegetable stock and bring to a simmer. Reduce heat to low and simmer* 10 to 15 minutes.

  3. Garnish with tofu, if desired

*Miso loses nutritional qualities when allowed to boil; always simmer miso over low heat.
