Mediterranean Chopped Salad

Ingredients

  • 8 cups packed Spring Mix greens

  • 1 1/2 cups canned garbanzo beans, drained

  • 1 1/2 cups peeled, diced English cucumber

  • 3 cups chopped tomatoes

  • 1/2 cup chopped dried prunes

  • 3/4 cup chopped Kalamata olives

  • 3/4 cup diced red onion

  • 3/4 cup crumbled feta cheese

  • 2 Tbsp toasted pine nuts

White Grape Dressing

  • 2 Tbsp toasted pine nuts

  • 1/3 cup white grape juice concentrate

  • 1/2 cup champagne vinegar

  • 4 lg fresh basil leaves

  • 1 tsp chopped fresh oregano

  • 1/2 tsp sea salt

  • 1/2 tsp black pepper

  • 1 tsp olive oil

Instructions

  1. Place all dressing ingredients in a blender or food processor, and blend until smooth.

  2. In a large bowl, combine all ingredients for salad, including dressing, and toss until combined.

  3. Divide salad among 8 salad plates.
