8 cups packed Spring Mix greens
1 1/2 cups canned garbanzo beans, drained
1 1/2 cups peeled, diced English cucumber
3 cups chopped tomatoes
1/2 cup chopped dried prunes
3/4 cup chopped Kalamata olives
3/4 cup diced red onion
3/4 cup crumbled feta cheese
2 Tbsp toasted pine nuts
White Grape Dressing
2 Tbsp toasted pine nuts
1/3 cup white grape juice concentrate
1/2 cup champagne vinegar
4 lg fresh basil leaves
1 tsp chopped fresh oregano
1/2 tsp sea salt
1/2 tsp black pepper
1 tsp olive oil
Place all dressing ingredients in a blender or food processor, and blend until smooth.
In a large bowl, combine all ingredients for salad, including dressing, and toss until combined.
Divide salad among 8 salad plates.
