Mashed Lima Beans

Ingredients

  • 1 lb frozen lima beans

  • 2 Tbsp extra-virgin olive oil

  • 1/2 cup buttermilk

  • 3/4 tsp sea salt

  • 1/4 tsp freshly ground black pepper

Instructions

  1. Steam lima beans in a large sauce pan fitted with a steamer basket for 20 minutes, or until tender.

  2. In a medium bowl, combine remaining ingredients and mash with a potato masher to a smooth consistency.
