Broccoli Cranberry Salad

A large serving bowl of broccoli cranberry salad with dressing

This easy broccoli cranberry salad recipe is a summer party favorite made with cranberries, apples, and a creamy low-fat homemade dressing.

Ingredients

  • 1 pound broccoli2 Tbsp Lemon Juice

  • 2.5 oz low-fat sour cream

  • 1 Tbsp evaporated cane sugar

  • 3.5 oz dried cranberries

  • 3 oz apples

  • 227 g mayonnaise

    Instructions

    1. In a bowl, whisk together lemon juice, sour cream, mayonnaise and evaporated cane sugar.

  1. Using the slicing attachment on your food processor, thinly slice the broccoli.

  2. Using a box grater, grate apples.

  3. Mix broccoli, apples and dried cranberries with dressing.

  4. For best results, allow salad to sit for a couple hours in the fridge before serving.
