This easy broccoli cranberry salad recipe is a summer party favorite made with cranberries, apples, and a creamy low-fat homemade dressing.
1 pound broccoli2 Tbsp Lemon Juice
2.5 oz low-fat sour cream
1 Tbsp evaporated cane sugar
3.5 oz dried cranberries
3 oz apples
227 g mayonnaise
In a bowl, whisk together lemon juice, sour cream, mayonnaise and evaporated cane sugar.
Using the slicing attachment on your food processor, thinly slice the broccoli.
Using a box grater, grate apples.
Mix broccoli, apples and dried cranberries with dressing.
For best results, allow salad to sit for a couple hours in the fridge before serving.
