Packed with filling fiber and the disease-fighting antioxidant quercetin, apples are the quintessential fall fruit. Pair them with cinnamon and prepare for an Autumn treat.
1.5 oz cream cheese, low fat 1 oz butter, unsalted 1/2 cup all-purpose flour 1 pinch salt 1 pound of apples, peeled, cored, and sliced 2 Tbsp evaporated cane sugar 2 tsp all-purpose flour 1 tsp cinnamon 1/4 tsp lemon juice 1 Tbsp egg whites 4 oz vanilla ice cream
Add cream cheese, room temperature butter, 1/2 cup all-purpose flour, and salt to a mixing bowl and mix just until the dough comes together. Chill.
Preheat oven to 375⁰ F.
Mix slices of apples with 2 tsp flour, evaporated cane sugar, cinnamon, and lemon juice.
Roll out the dough to about a 9-inch circle. Brush with egg whites.
Place apples in the center of the dough, leaving a 1-inch edge around the sides. Fold the crust over for a “rustic” look.
Place on a sheet tray lined with parchment paper and spray with cooking spray.
Bake for 30-45 minutes until golden brown.
Cool completely, then cut into 8 slices. Serve each piece with 1/2 oz of vanilla ice cream.
Apples are on the Environmental Working Group’s Dirty Dozen Plus list, which means they contain a high level of pesticide residues, so try to buy apples that are organic and always wash them thoroughly before eating.
